
Preheat the oven to 200°C.
Fry leeks and carrots in oil, then add garlic, herbs, and spinach.
Mix in lemon zest, cinnamon, and feta.
Whisk eggs, yoghurt, and oil for your magic glue.
Brush 2-3 filo sheets with the yoghurt mixture, add filling (squeeze out juice), roll, brush with the yoghurt mixture top, and sprinkle with seeds.
Bake for 30 minutes until golden. Yum!
